Crockpot Carne Asada

Directions
Using a fork, stab the flank steak all over. Season both sides with salt and pepper generously. Place the flank steak in the bottom of the crockpot.
In a bowl, whisk together the olive oil, lime juice, orange juice, vinegar, jalapeno, red onion, garlic and cumin.
Pour marinade over the flank steak. Cover and cook on low for 6-8 hours or high for 4-6 hours.
When cook time is complete, use two forks to shred the meat. Place back in the crockpot and stir in the cilantro. Turn off the crockpot and let the meat cool for 15 minutes while it soaks up the juices it created while cooking.
Serve in lettuce cups or taco shells with spicy Mexican coleslaw.

1/3 cup olive oil
Salt and pepper
1/4 cup fresh squeezed orange juice
2 TBS fresh lime juice
2 TBS organic apple cider vinegar
1 jalapeno, seeds removed and finely chopped
1/2 red onion, finely chopped
1/4 cup freshly chopped cilantro
4 cloves garlic, minced
1 tsp cumin
Butter lettuce, green leaf lettuce or taco shells for serving
