grilled Carne Asada
Directions
Combine all ingredients in a medium glass or metal bowl with a tight fitting lid. Reserve a small amount (about 3/4 - 1 cup) of marinade for later use.
Alternate meat and marinade in a large metal or glass bowl with a tight fitting lide. Marinate for 3-4 hours, preferable over night.
Place meat directly on pre-heated grill, drizzling marinade over the top.
Grill/smoke for 30-45 minutes at 225°F or until internal temp reaches 135°F.
Turn up the grill to 350°F for 5 minutes for a good sear on the meat, do not flip the meat.
Remove from the grill, tent with foil and let rest for 15-20 minutes.
Slice and enjoy! Serve with cilantro lime rice, lime wedges and good salsa and chip!

1T black pepper
3/4 cup fresh squeezed orange juice
1/2 cup fresh lime juice
1/2 cup fresh lemon juice
1/2 cup soy sauce
1 bunch freshly chopped cilantro
4 cloves garlic, minced
1 T cumin
1 T chili powder
1 T ground paprika
1 T finely chopped chipotle in adobo
1 T dried oregano
