grilled Carne Asada

Directions

  1. Combine all ingredients in a medium glass or metal bowl with a tight fitting lid. Reserve a small amount (about 3/4 - 1 cup) of marinade for later use.

  2. Alternate meat and marinade in a large metal or glass bowl with a tight fitting lide. Marinate for 3-4 hours, preferable over night.

  3. Place meat directly on pre-heated grill, drizzling marinade over the top.

  4. Grill/smoke for 30-45 minutes at 225°F or until internal temp reaches 135°F.

  5. Turn up the grill to 350°F for 5 minutes for a good sear on the meat, do not flip the meat.

  6. Remove from the grill, tent with foil and let rest for 15-20 minutes.

  7. Slice and enjoy! Serve with cilantro lime rice, lime wedges and good salsa and chip!

Ingredients

  • 3 lbs Wagyu Flank Steak

  • 1/2 cup olive oil

  • 1T black pepper

  • 3/4 cup fresh squeezed orange juice

  • 1/2 cup fresh lime juice

  • 1/2 cup fresh lemon juice

  • 1/2 cup soy sauce

  • 1 bunch freshly chopped cilantro

  • 4 cloves garlic, minced

  • 1 T cumin

  • 1 T chili powder

  • 1 T ground paprika

  • 1 T finely chopped chipotle in adobo

  • 1 T dried oregano
